Instructions. In a large bowl, combine glutinous rice flour, 1 cup of the sugar, coconut milk, evaporated milk, and eggs. Whisk together until batter is well-blended and smooth. Generously grease an 11 x 9 baking dish or 10-inch cast-iron skillet with margarine or butter.
Preheat oven to 350 degrees F. Line a 13x9" baking pan with foil, extending the sides of the foil over the edges of the pan. Spray the foil liberally with cooking spray and set aside. In a large bowl, combine the cake mix, ONE (1) stick of the melted butter and 1 egg until a soft dough forms. Batter will be thick.
Preheat oven to 350 degrees F. Line an 8×8 baking dish with foil. Melt the butter and mix it with the flour, sugar, and salt until just combined. Don’t overmix. Press into the bottom of prepared pan. Bake at 350 for 30 minutes until the edges just start to turn golden.
